Try Something New, Veggies You’re Probably Not Eating

Tired of eating celery and carrots? Bored with lettuce?

Many parents complain their children won’t eat any vegetables, but the truth is most adults eat less than two servings of veggies a day. Grownups it’s time to spice things up and try something new!

BEETS

A powerful antioxidant and good source of folate.  Try it- Peel beets and grate over salads.

BRUSSEL SPROUTS

Do away with mushy, over boiled sprouts you were forced to eat as a kid. Sprouts are loaded with antioxidants, and one cup has as much vitamin C as an orange.

Try it- Cut them in half, toss with olive oil, 1/2 teaspoon chili pepper, 1/2 teaspoon sea salt, ¼ teaspoon black pepper and roast at 400 degrees until brown (20-25 minutes). Top with ¼ cup toasted pine nuts.

CAULIFLOWER

Rich in plant chemicals shown to lower the risk of certain types of cancer. Plus, some studies suggest that woman who regularly eat cauliflower may lower their risk for rheumatoid arthritis.

Try it-  Chop into small florets, toss with olive oil, 4 garlic cloves, chopped, ¼ teaspoon red pepper flakes, ½ teaspoon kosher salt, 1 teaspoon dried tyme, then bake at 450 degrees for 20 minutes.

SWISS CHARD

An excellent source of vitamins A, C and K, and plant chemicals that fight macular degeneration and cataracts.

Try it-  Sauté chopped swiss chard in a skillet with olive oil and lemon until leaves are slightly wilted. Stir them into soups or use them in a stirfry.
